Joe’s Cucina Vol. 3 returns to The Fat Ox, bigger, bolder, and more delicious than ever — featuring a special collaboration with Canmore Pasta Co.

This family-style, Italian-inspired evening celebrates handcrafted pasta, signature Fat Ox flavours, and comforting dishes meant to be shared. From fresh spaghetti tossed in classic cacio e pepe to delicate ravioli and lobster-filled fazzoletti, each course highlights the beauty of simple ingredients done exceptionally well.

Bison Bresaola - Cured bison, gently pickled mushroom, brassica mustard

Arancini - Red wine braised beef short rib, roasted shallot aioli 

Marinated Mussels - Fennel, charred peppers, pancetta, chives 

MAIN COURSE 

Cacio Pepe - Spaghetti, pecorino Romano, freshly cracked black pepper 

Ravioli - Roasted celery root and ravioli, braised Alberta lamb ragu, brown butter 

Fazzoletti - East coast lobster, butter leek cream, handkerchief pasta, basil 

DESSERT 

Chef Erin's Tiramisu - Espresso-soaked lady fingers, mascarpone cream
