Taste of the Peaks

Four courses. Mountain-inspired. Weeknights done right.

There’s something special about slowing down on a weeknight — lingering over a great meal, sharing stories, and letting the evening unfold. Introducing Taste of the Peaks, a new four-course dining experience at The Fat Ox, inspired by alpine comfort, Italian soul, and the bounty of our region.

Available Monday through Thursday after 5pm, Taste of the Peaks invites you to explore a thoughtfully curated menu designed for cozy evenings and elevated indulgence — all for $48 per person.

Start at the Summit

Begin your journey with a first course that sets the tone. Choose between a silky roasted cauliflower soup finished with chestnut and white truffle oil, or a vibrant chopped salad layered with arugula, Tuscan salami, ceci, artichoke, asiago, and pepperoncino.

Feeling indulgent? Add venison carpaccio with EVOO, parmigiana, capers, arugula, and sea salt for a true alpine touch.

Pasta, Perfected

Your second course brings classic Italian comfort. A rich and timeless carbonara with pancetta, egg yolk, and parmigiana, or delicate ricotta ravioli with squash, sage brown butter, toasted pumpkin seeds, and grana Padano.

The Main Event

For the third course, choose between beautifully prepared steelhead trout with smoked ham hock, lentils, and pickled apples, or roasted chicken with chicken sausage, olives, capers, lemon, and fregola.

Looking to elevate even further? Add osso bucco — Alberta lamb shank, saffron risotto, and Sicilian gremolata — for an unforgettable finish.

Sweet Ending

End on a high note with dessert. A classic tiramisu with espresso-soaked ladyfingers, mascarpone, and dark chocolate, or a decadent chocolate torta with amarena cherries, Marcona almonds, and Chantilly cream.

Taste of the Peaks is designed for relaxed evenings, date nights, and reasons to linger just a little longer.

Join us weeknights and experience the peaks — one course at a time.
